Food: Fuel for Thought

Instructor: Professor Salma Monani
                Department of Environmental Studies

Do you love to eat? Have you ever been hungry? Does the smell of something cooking evoke special memories? Food is as essential to our survival as the air we breathe, yet rarely are we as forgetful about eating as we are about breathing. This Seminar asks you to think deliberately about your own food experiences and encourages you to situate these experiences within the broader context of the nation's food culture. Is there such a thing as American food? Where does it come from? What are its social, economic, and environmental effects? In asking these questions, we will explore the worlds of fast food, conventional foods, and local and organic foods. To get a taste of these worlds, we will read, write, go on a number of field trips, cook, and, of course, eat-essentially whetting our appetites for further thought and action.
